I wrote previously about 'Dr. Melumad', an Israeli company, founded by a family of pharmacists specializing in unique plant-based skin products.
Dr. Melumad's seven herbs shampoo is based on a unique formula of herbal extracts that revives the hair giving it a nice shiny clean look and a soft velvety feel. The Har (i.e. Mount) Sinai Farm, located in Susiya in the south of Israel, both raises sheep in pasture and has a mill driven by millstones. The farm offers a variety of pure, high-quality flours from different types of wheat and organic grains that are grown on the farm.
The grinding with millstones maintains the high nutritional value of the grain thanks to the fact that it does not burn it.
The flour series includes a variety of grains, the most prominent of which are the organic whole wheat flour, 70% organic wheat flour, organic whole spelt flour and 70% organic spelt flour.
Organic Whole Spelt Flour
Spelt flour is considered a health food as it contains a higher percentage of protein as well as a large amount of dietary fiber, minerals and vitamins and a small amount of gluten. Spelt gives a particularly rich flavor and texture to breads. Consumer price 17 NIS.
70% Organic Spelt Flour
70% spelt flour is similar to whole spelt flour, which is very rich in protein, vitamins, minerals and dietary fiber. Thanks to a special grinding process that removes some of the bran in the husk leaving only 70% bran and the spelt germ, the process contributes to preserving the taste and improving the leavening ability. The flour is more airy than wholemeal spelt flour. Consumer price 17 NIS.
Organic Whole Wheat Flour

70% Wheat Flour
70% wheat flour ground by millstones combines the health benefits of whole wheat flour with improved leavening ability. During the grinding process, some of the bran in the husk is separated so that 70% of the bran remains without removing the wheat germ and essential dietary fiber.
The flour is more airy than wholemeal flour, its products are lighter and less dense and the pastries from this flour have a deep hue and a rich taste. Consumer price: 11 NIS.

Har Sinai's Recipe for Chocolate Chip Cookies for Tu B'Av
Ingredients:
1 1/2 cup of wheat/spelt flour (any of the above)
1/2 cup of fine oatmeal
200g butter or 200 mL oil
3/4 cup of brown sugar
2 eggs
1 teaspoon baking soda
1 teaspoon vanilla extract
1 bag of chocolate chips
Preparation:
Heat the over to 180 oC.
Use a mixer to blend the butter with the sugar. Add sequentially while mixing: eggs,baking soda, vanilla extract, oatmeal and flour till you obtain a uniform dough. Stir in the chocolate chips by hand. Form small balls of dough and place them on a baking sheet with sufficient spacing. Bake for 10-20 min till golden at the bottom. The cookies harden when cooling.
Serve with lots of kisses.
